German Pork Knuckle (Schweinshaxe)
Pork Knuckle – is as Bavarian as Oktoberfest, lederhosen and BMW.
Called Schweinshaxen, these mighty hunks of roasted pork hock are a culinary fixture in the Bavarian region.
The Pork Knuckle is the end of the pig's leg, just above the ankle and below the meaty ham portion.
